Winemaking
Picked in the early morning, the fruit for this wine was destemmed to fermenter with no crushing to maintain a high proportion of whole berries to maximise fruit expression. After a gentle fermentation on skins for 8-10 days wth twice daily pumpovers the wine was pressed to combination of new and seasoned French and American oak. Maturation in barrel on light lees was for 20 months with regular topping but no racking. The blend was then taken from parcels and barrels that demonstrated the lifted aromatic profile and fine tannins that speak of Bethany Wines.

Tasting Notes
Colour
Dense and dark purple robe from core to rim.
Aroma
Beautifully perfumed nose, fresh dark blackcurrant fruit with a creamy clove spice lift and dense floral notes.
Palate
A super compact and driven palate of dark fresh berries, spiced cream and lavender, rosemary herbal notes. The tannins are significant but elegantly folded into the densly fruited structure. Soft acid combines with these tannins to give balance and texture and produce a finish that is direct, long and decisive.
Food Pairing
Perfect with roasted meats, gnocchi and rich pasta dishes.

Viticulture
The 2022 vintage overall was a very balanced and excellent vintage. Adequate rainfall in 2021 was followed a heavy hailstorm which did create some damage in the Shiraz vineyards. However, the main summer ripening season was blessed by moderate temperatures with no very hot (>35C) days and cool nights. This lead to a long and gentle ripening period allowing all fruit to achieve full flavour maturity along with sugar ripeness. The outcome was a long harvest period without any undue pressure from the weather and both white and red grapes showing great flavour intensity, excellent retention of acid and in the case of the red grapes, exceptional colour density.

This is seductively appealing on the nose with dark berry, mixed spice, cured meat and roasted nut aromas with a hint of dark cocoa. The palate offers terrific fruit intensity combined with fleshy texture backed by layers of silky tannins, finishing wonderfully long and satisfying.
