Wine Details
Night picked, destemmed and pressed to stainless steel with 10% new French oak for cool fermentation of 10-14 days. Lees contact with minimal battonage for approx. 2 months post ferment before being allowed to settle naturally and continue to gain weight and freshness through contact with the lees.

Tasting Notes
Nose: Bright nose filled with creamy custard apple, soft juicy citrus oils and frangipani.
Palate: A full and prounounced Chardonnay with cashew, lime, sweet apple skin and pear flavours mingling within a structure of fine texture and supportive acidity. A long, finish brings creamy orchard fruits to close out
Notes
For the second winter in a row, the Barossa Valley did not receive the soaking winter and spring rains that had been hoped for, and drought conditions prevailed. Early summer continued to be dry and warm with an earlier than normal budburst followed by a couple of severe frosts causing widespread damage. Despite this, many vineyards recovered, with vines growing fertile secondary shoots. A continuing warm and dry summer lead to very early harvest across the board, with loose bunches and small berries characterising many vineyards at Bethany. Despite the travails, quality across the board looks great with whites retaining lovely bright acid and good fruit focus
