A bright nose of red and black fruits is balanced by a hint of cedar complexity. The palate has fresh cherry and blackcurrants mingling with a fine cedar and crushed stone character which are all carried to a long finish by fine-grained tannins.

Wine Details

Winemaking

Picked in the early morning, the fruit for this wine was destemmed and partially crushed to fermenter with a proportion of whole berries to maximise fruit expression. After a gentle fermentation on skins for 8-10 days wth twice daily pumpovers the wine was pressed to new and seasoned French oak before resting for its 18 month maturation.

Tasting Notes

Colour

Pretty and dark purple crimson

Nose

A dark and seductive nose of black fruits on slate. Inky, earthy, dark fruits and baking spices.

Palate

An attack of warm dark cherry and blackcurrant fruit is instantly supported by a framework of rich dark chocolate tannins, fine grained and powdery they add depth and drive to the palate. Black cherries and damson plums form the fruit profile with subtle clove and cinnamon spices adding complexity. Finish is long and persistent.

Food Pairing

Will go perfectly with slow roasted lamb, hard cheeses and rich slow cooked dishes.

Notes

Viticulture

2020 was a year of significantly reduced yield in the Barossa in general and specifically at Bethany. This was partly due to a hot, dry December and early- mid-January which was similar to 2019. Careful soil moisture monitoring was beneficial in allowing Bethany to manage soil moisture in the most efficient way possible. The major impact on the reduced yield was the highly variable temperatures and weather conditions in spring 2019. The resulting crop was very small even by recent low yield standards but critically the quality was very high with good natural acidity, excellent colour and tannin structure leading to some magnificent wines.

    Beautifully structured and splendidly expressed, the wine shows blackcurrant, dried herb, clove and spicy oak characters on the nose, followed by a wonderfully flavoursome palate offering excellent focus and persistency. Classically structured and robust with a lengthy sturdy finish.
