Blue Quarry Shiraz 2022
A wine that embodies the village and spirit of Bethany. Primarily sourced from three exceptional estate owned vineyards that produce subtly different styles, this Shiraz provides a nuanced view of the village and its attributes, a wine of great style and personality.
An energetic and luscious palate of darkly fruited dark chocolate, sweet biscuit undertones and briary floral characters.Â
Picked in the early morning, the fruit for this wine was crushed to fermenter with a high proportion of whole berries to maximise fruit expression. After a gentle fermentation on skins for 8-10 days wth twice daily pumpovers the ferments were pressed to a combination of new and seasoned French and American oak before resting for its 18 month maturation. Strict barrel selection was then undertaken to prepare this blend.
